This is a simple but tasty Greek spinach pie recipe. To make the Greek spanakopita you need to prepare two things, first you need the filling as well as the phyllo. Let’s start with the spinach pie filling.

Spanakopita is a Traditional Greek Recipe
Spanakopita is one of those things that has many recipes. It is a very common Greek dish and is made differently from family to family. We will teach you to make spanakopita recipe from scratch. This is a great recipe Greek spinach pie. Before you proceed to our spanakopita recipe you could also find some Greek Recipes in other Greek recipe books. Spanakopita is the Greek spinach pie.

Ingredients Spanakopita Filling:
1kg of spinach
2 leeks
4 fresh onions
1 bunch of dill
3 eggs
250gr of feta
Salt, pepper,
1/2 cup of oil.

Clean the spinach and the leek. Wash them well and chop them up. Then chop up the dill and the onions. Put the oil in a pot for it to heat up and we sauté it with the onions, leek, the dill, and the spinach. Then add the salt and pepper lower the temperature and leave them for a few minutes to dry up without adding any water. Take the pot off the stove and after it has cooled off we add the crumbled feta and the beaten eggs. Let the mix cool down in room temperature.

½ kg of flour
½ a cup of oil
1 cup of water
1 tablespoon of salt
2 teaspoons of vinegar
A few sesame seeds

Afterwards prepare the Phyllo as follows: Put the flour in a bowl and in the middle of the bowl we create a little hole in which we add the salt, the oil, the vinegar, and slowly add the water. Roll dough in to a single ball which we leave to rest for about half an hour while being covered. After that separate the dough into four parts and we open them up into thin pieces of phyllo. Place one of the four phyllo pieces in the “oiled up” bottom of the pan while trying to cover all of the pans corners. After oil up the phyllo piece you just placed in the bottom of the pan and cover it with another phyllo piece.

Afterwards place the filling and cover it with the two remaining phyllo pieces while oiling them up in between. Then join all the phyllo pieces on the edge of the pan. Then spread some more oil on the top of the pie while garnishing it with some sesame seeds and place it in the preheated oven for about an hour. And there you have it, traditional Greek spanakopita.
